Baking and Spinning while staying at home. ( My favorite Sweet Onion and Goat Cheese Quiche)

Well, at least we’ve been eating well,

that’s what I keep saying about all of this staying at home. I’m personally trying to find as many silver linings as I can while the world all seems a bit turned upside down. I like to cook normally but I have to admit the past few years of having to run the kids back and forth to two different schools and try to make yoga and run errands has cut down on my enjoyment of it. So it’s been fun to actually enjoy cooking again. This recipe I found in an issue of good housekeeping years ago and I changed it a bit. It’s a great variation on quiche and has caramelized onions and balsamic vinegar. It’s rich and a real treat I think. It’s great with a light salad with some sort of a vinaigrette dressing.


Goat Cheese & Caramelized Sweet Onion Quice

Ingredients

1 pie crust ( I like the frozen ones from trader joe’s but any kind works.

4 oz goat cheese

2 sweet onions

1/3-1/2 cup shredded Parmesan Cheese

3 eggs

2 tablespoon butter for browning the onions

1/2 cup heavy cream or half and half

3 tablespoons of Balsamic Vinegar

Preheat the oven to 350 degrees

Place your pie shell in a dish and cinch the edges.

Caramelize the 2 onions after having sliced them medium thin. Let them cook down in the butter with salt and pepper stirring from time to time. Cook in a skillet with the lid on until they have reduced in size and are a golden brown color and smell wonderful.

Add the crumbled goat cheese and the Parmesan cheese to the pie shell.

Add Caramelized onions on top of the cheese.

Mix of the 3 eggs, cream & Balsamic vinegar. Then pour that mixture on top.

Sprinkle with a bit of salt and pepper and then bake for around 40-45 min. When it’s done you don’t want the middle to look too giggly.

Let it cool off and firm up a bit and then enjoy it.

Life at this point has taken on a bit of a weird new rhythm between trying to keep the kids happy and still learning stuff while trying to still do things the let me breathe and grow as a person. Luckily for me my job is very closely related to my craft and something I love. While I don’t get to spin or knit as much as I would like or you would think these days I am really enjoying the bit that gets fit in. I have been spinning up these gorgeous mixed batts from one of my favorite people and super salted fiber artist Heidi Stone Black of Cocoon Homespun. These batts are blended merino, Corriedale and grey Angora rabbit. They are a wonderful example of a smooth fine blended batt and it has made for lots of enjoyment on my end.
