Buffalo Stuffed Sweet Potatoes

Buffalo Stuffed Sweet Potatoes

Ingredients:

  • 4 medium sweet potatoes

  • 4 slices of bacon, chopped

  • 1 lb chicken breast tenderloins are fine

  • 1/3-1/2 cup Franks Hot Sauce

  • 1/4 cup butter,

  • 1/2 cup shredded cheddar cheese

  • 2 green onions, thinly sliced

  • 1/2 cup sour cream mixed with a tablespoon ranch seasoning mix

Instructions:

  1. Scrub the sweet potatoes to clean them thoroughly. Using a fork, pierce each potato several times.

  2. Place the sweet potatoes in the microwave and cook on high for 5-7 minutes per potato, or until they are fork-tender.

  3. While the sweet potatoes are cooking, season the chicken breasts with garlic powder, onion powder, paprika, and cayenne pepper.

  4. In a slow cooker, combine the Franks Hot Sauce and melted butter. Add the seasoned chicken breasts and coat them with the sauce mixture.

  5. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is fully cooked and tender. ( you can also use the instant pot setting for chicken)

  6. Shred the cooked chicken using two forks and mix it well with the sauce in the slow cooker.

  7. Once the sweet potatoes are done cooking in the microwave, let them cool slightly. Then, slice a lengthwise slit into each sweet potato to create a pocket.

  8. Stuff each sweet potato evenly with the buffalo chicken mixture.

  9. Sprinkle shredded cheddar cheese over each stuffed sweet potato.


  10. Top with chopped bacon, sliced green onions, and a dollop of sour cream mixed with ranch seasoning.
